What is a good electric motor?

It depends on how fast you want to go? ...&/or how much you want to spend ;) A 48V 1,000W (~1.2HP) motor can easily propel a light kart (~$150.00) ...or a 48V 4,000W (~5HP) can propel heavier karts pretty well (~$1,000.00)

    Why don't EV's have transmissions?

IMO the simplest way to explain it is... 1.) Engines (gas or diesel) usually have to "run" or "idle" before being used ...& so, need a separator (clutch/transmission) for engaging or applying the power to the wheels 2.) Most engines have a very narrow usable "power band" (0 RPM's to at least...

Why does welding tabs to an axle, then bolting the sprocket to the tabs not work?

The sprocket would not be adjustable ...& welding to an axle weakens it Something like this the usual method for mounting a sprocket (or brake drum) to an axle Steel Multi-Patterned Sprocket / Brake Hub (1" Bore) https://www.bmikarts.com/Steel-Multi-Patterned-Sprocket-Brake-Hub-1-Bore-_p_1404.html
