Check the whole throttle system and butterfly in carb. Check throttle return springs all of it! For starters.

What @Denny said but Also make sure the cable isn't jamming up and moves freely.
Could be the idle adjustment although I doubt that.
Could be a blown gasket or dirty jet making it crazy lean.
Idk what kind of exhaust it has but a cracked header pipe can do inexplicably odd things as like be puke rich one moment, and take off like a kicked dog the next because it went lean
